Starbucks Pumpkin Scones YUM!


2 c flour
7 TBSP sugar
1 TBSP baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger
6 TBSP butter
1/2 c canned pumpkin
3 TBSP half and half
1 large egg

Powdered Sugar Glaze
1 c powdered sugar
2 TBSP milk

Spiced Glazed
1/2 c powdered sugar
1 TBSP milk
1/4 tsp cinnamon
1/8 tsp nutmeg
1 pinch ginger
1 pinch cloves

Preheat oven to 425 degrees. Line baking sheet with parchment paper.

Combine dry ingredients in a large bowl. Cut in butter with pastry knife until mixture is crumbly. Set aside.

In a small bowl whisk together pumpkin, half and half, and egg. Fold into dry ingredients. Form the dough into a ball. Pat out dough onto a lightly floured surface and form it into a 1 inch thick rectangle. Using a pizza cutter slice the dough into thirds. Then cut those into triangles so you have 6 triangles total.

Place on prepared baking sheet. Bake for 14-16 minutes. Scones will be lightly brown. Place on wire rack to cool.

While they are baking prepare plain glaze and spiced glaze. When the scones are cooled brush plain glaze. The more the merrier in my opinion. Then drizzle spiced glaze over the top. Super yummy to eat with a tall glass of milk!

Pumpkin Chocolate Chip Pancakes

1 c flour
1 1/2 TBSP brown sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp cloves
1/8 tsp ginger
1 c buttermilk
1 egg
1/4 c pumpkin puree
chocolate chips

In a medium bowl mix together all dry ingredients. In a small bowl measure out the buttermilk and add the egg. Beat. Mix in the pumpking puree until completely blended. Mix wet ingredients into dry ingredients until combined.

Heat griddle. Using a 1/4 c measuring cup pour batter on griddle. Top pancakes with chocolate chips. Cook and serve.

Pumpkin Breakfast Rolls

Recipe from Picky-Palate.com

I halved the recipe for my little family of 3.

2 pkg pillsbury cresent rolls
1/4 c brown sugar
1/4 tsp cinnamon
4 oz cream cheese
1/4 c pumpkin
1/8 tsp nutmeg

Unroll cresent rolls and pinch together to form "cinnamon roll" dough (long sides pinched together). Mix together the rest of the ingredients in a blender or with a hand mixer. Then spread over dough. Roll long end to the other long end (again, like a cinnamon roll). Cut either with a knife or using dental floss into 1/2-1 inch pieces. Place into greased 9" round pans leaving the center open. Bake at 350 for 28-30 minutes. Cool for 10 minutes then frost.

Frosting
4 oz cream cheese
1/2 c powdered sugar
1/2 tsp vanilla
1 TBSP pumpkin

Little Monkey Bread

Recipe from Picky-Palate.com

1 roll French Bread Loaf (Pillsburry), cut into pieces
6 TBSP sugar
3 TBSP cinnamon

Toss dough pieces in cinnamon and sugar. I put bread pieces in a gallon ziplock baggie and shook it until covered. Place dough in LINED muffin tins. (I made them without being lined and it was a pain to clean so I recommend doing lined).

1/2 c butter
1/2 c brown sugar

Melt butter and add sugar. Mix. Pour over dough pieces evenly. Bake at 350 for 18-20 minutes. Remove from oven. Let sit for 5 minutes then drizzle with frosting.

Frosting
1/2 c powdered sugar
2-3 TBSP heavy cream

Crepes



For every egg add:

1/3 c flour
1/2 c milk
1 1/2 tsp olive oil

Blend all ingredients. Heat frying pan over medium heat. Pour enough batter into frying pan while manuvering batter around entire pan **Take frying pan in left hand, blender in right. Pour a batter in while making circles with your left hand and pan to make batter cover entire bottom of frying pan. Set pan back on burner.** Cook until batter seems like it is "dry" or bubbles form or pop. Flip with a spatula. Other side doesn't take as long to cook. Place hot crepe on a plate.

Now comes the creative part. Here are some ways I like to eat my crepes.

1-Butter, sprinkle with powdered sugar, wrap like a burrito.
2-similar to #1 but add strawberry jam or fresh strawberries.
3-Roll with nothing in it and pour syrup over it.
4-Sprinkle lemon juice and white sugar and roll up.
5-Fresh cut up peaches with little scoops of vanilla ice cream and roll up.
6-Strawberries and whip cream. Roll up.
7-Nutella and bananas, roll up.
8-while hot sprinkle a couple chocolate chips (so they melt) on it with sliced bananas, roll up.


I'm sure there are many more ways to eat it....Let me know what you come up with!

Vanilla Wafer Parfait

Recipe off of Vanilla Wafer box.

Vanilla Pudding or Vanilla Yogurt
Strawberries, washed and cut
Bananas, sliced
Mini Vanilla Wafers

Alternate between vanilla pudding, fruit, and wafers. Enjoy! It's a yummy breakfast that is not only delicious but filling.

Egg in the Hole


1 piece of toast
1 egg
butter
salt and pepper
Cut a hole in the bread with a cookie cutter (any fun shapes you want) or use a cup rim. Butter each side of remaining edges of bread. Place on a hot griddle or frying pan. Immediately crack egg into the hole. Salt and pepper to taste. Flip when egg whites start to turn opaque. Cook to how you like your egg.
I like to butter the cut of the bread and toast it on the frying pan and spread with jam. That way I'm not "wasting" anything.

French Toast Casserole

2 tsp butter, softened
8 slices of white bread, cut into 1 inch cubes
7 eggs
2 c milk
1/4 c heavy cream
1/4 c maple syrup
4 TBSP sugar, divided
3/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cardamom

Grease a 9x13 pan with butter and evenly fill the dish with bread cubes.

In a large mixing bowl whisk together eggs, milk, cream, maple syrup, 2 TBSP sugar, cinnamon, nutmeg, and cardamom. Pour this mixture over bread cubes and press down over the surface of the casserole with a spatula to help the bread soak up the liquid. Sprinkle with remaining sugar. Cover with aluminum foil and refrigerate overnight.

Preheat oven to 350 degrees. Bake for 30 minutes covered. Remove foil and bake an additional 30-35 minutes or until it is puffy and brown. Let it set for 10 minutes before slicing into. Serve with maple syrup. Makes 10-12 servings.

Waffles

Like most of my pictures-it doesn't do the waffles any justice.

Batter
4 eggs
1/2 c sour cream
3/4 tsp salt
1/2 c oil
2 c milk
2 tsp baking powder
1/2 tsp baking soda
2 c flour
1/4 c ground flax seed (optional)

Separate eggs. Whip egg whites and set aside. Combine all other ingredients in large bowl. Fold egg whites into batter. Use waffle iron to bake.

Syrup
2 c water
4 c sugar
1/2 tsp maple extract
1/2 tsp almond extract

Boil water in a large sauce pan over high heat. Add sugar and turn to medium high. Stir occasionally until bubbles for on bottom of pan. Add extracts. Serve warm.

Hootananny Hotcakes


Also known as GERMAN PANCAKES


6 eggs
1 cup milk
1 cup flour
1/2 tsp salt
cinnamon and sugar, sprinkled (optional)
green apples, peeled and sliced (optional)
6 TBSP butter


Preheat oven to 400 degrees. In a 9x13 casserole dish put the butter in it, cut into slices. Place in warming oven to melt the butter. In a blender add first 4 ingredients together and mix. Take baking dish out of oven when the butter is melted. Pour in batter. OPTIONAL: sprinkle cinnamon and sugar over batter and place apple slices in it. Bake for 25 minutes or until you get golden brown ridges of batter. Serve with honey, powdered sugar, or syrup. (If you use cinnamon and sugar and apples then no topping required.)



This breakfast has been a family tradition since the beginning of time. When I was little we use to name each "mountain" and whose house we wanted to eat. Parker loves eating it too...so enjoy!

Oatmeal Pancake Mix

3 cups flour (1/2 white, 1/2 wheat)
3 1/2 baking powder
1 1/2 salt
1/2 cup brown sugar
1 1/2 cups shortening
3 cups oats (I used quick oats)

Stir in first 4 ingredients. Cut in shortening. Add oats. Place in a container to save for later.

To use:
1 1/2 cup mix
1/2 cup milk
1 egg

Let it sit for 5 minutes. Then pour on hot griddle and cook. Serve with applesauce or syrup.

Parker's Pancakes



2 eggs separated
2 cups milk
2 cups flour
1 TBSP baking powder
1 tsp salt
1/4 cup oil
1/4 cup sugar

Separate egg whites and set aside. Add yolks to the rest of the ingredients. Mix well. Beat egg whites and fold into batter. Cook on a medium hot griddle.

Sticky Buns



18 rhodes rolls, thawed and cut in half
2 TBSP butterscotch dry pudding mix
1/2 cup brown sugar
1 cube butter
cinnamon

Once dough is thawed enough to cut, cut in half. Grease a bundt pan and place dough in it. Cut butter into slices and place spaced out on top of dough. Sprinkle the rest of ingredients over the top. Cover and let it rise over night. In the morning bake at 350 for 25 minutes. To turn out place serving plate on top of bundt. Grab sides and plate and flip over. Great served with fruit and a tall glass of milk.

Make Ahead Pancake Mix


8 1/2 cups flour (6 1/2 white and 2 wheat)
1 Tablespoon baking powder
1 Tablespoon salt
2 teaspoons cream of tartar
1 teaspoon baking soda
1 1/2 cups powdered milk
2 1/4 cups shortening

Mix all ingredients minus shortening together. Cut in shortening. Then store in a container for later.

To make pancakes:

2 cups pancake mix
1 egg
1 cup water (or more depending on how thick you like your pancakes)
