Oreo Truffles

1 16oz bag oreos
8 oz cream cheese at room temp
Melting chocolate
3 oreos crushed to sprinkle on top

Oreos need to be the brand name. I tried generic and it wasn't as good. Crush oreos either by hand or in a blender. I did it in my blender. Combine with pastry knife the cream cheese. Roll into 2 inch balls. Dip in chocolate (I used milk chocolate, but I would definitely use white chocolate next time). Sprinkle with oreo crumbs before cooled. Enjoy!

Homemade Oreos


1 box devil's food cake
2/3 c shortening
2 eggs

Mix together using a spoon. Bake at 350 for 8-10 minutes. Cool completely before frosting with cream cheese frosting. Serve with milk

Cookie in Ramekin

inspired by Kuki's Kookbook Blog

cookie dough, your choice (I used my Best Ever Chocolate Chip Cookie recipe)
ice cream
toppings

Spray ramekins. Press dough into dish until it is about 1-1 1/2 inches thick. Bake at 350 for 15 minutes. Remove from oven. Let cookie cool slightly. Top with scoop of ice cream and your choice of toppings. Enjoy!

Oatmeal Chocolate Chip Cookies

3/4 c shortening
1 c packed brown sugar
1/2 c sugar
1 egg
1/2 c water
1 tsp vanilla
1 1/4 c flour
1 tsp salt
1/2 tsp soda
3 c oats
chocolate chips

Cream shortening and sugars. Add egg, vanilla and water. Add dry ingredients. Stir in chocolate chips. Bake at 350 for 12-15 minutes. Makes about 5 dozen.

Best Ever Chocolate Chip Cookies

3 1/4 c flour
1 tsp baking soda
1 tsp salt
1 c sugar
1 c brown sugar, packed
2/3 c butter, softened
2/3 c shortening
2 eggs
2 tsp vanilla
1 1/2 c semisweet chocolate chips
1 12/ c milk chocolate chips

Whisk together flour, soda, and salt in medium bowl. Set aside. In a mixer cream sugars, butter, shortening, eggs and vanilla. Stir in flour mixture to sugar mixture. Then add chocolate chips. Form into cookies with ice cream scooper (nothing better than big chocolate chip cookies) or you can do it in whatever size you want. Place on ungreased cookie sheet. Bake for 12-14 minutes at 350 degrees. Cool 2 minutes before placing on wire rack.

Easy, Low fat PUMPKIN CHOCOLATE CHIP COOKIES



1 box spice cake
1 small can pumpkin puree
chocolate chips

Bake at 400 for 18 minutes (for big cookies).

Snickerdoodles

2 3/4 cups flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
1 cup shortening or 1/2 cup shortening 1/2 cup margarine
1 1/2 cups sugar
2 eggs
Mix all dry ingredients together in medium bowl. Set aside. Mix shortening, sugar, and eggs together. Add dry ingredients, mix well. Scrap down sides of bowl and make dough "pretty" so it's all touching each other. Cover and chill until easy to handle-about 1 hour. Form dough into little balls. Roll into a sugar and cinnamon mixture (about 2 parts sugar to 1 part cinnamon). Place cookies on ungreased cookie sheet 3x4. Bake 8-10 minutes at 400 degrees.
Makes 5 dozen.

Dear Lizzie's Sugar Cookies


*BEWARE: these cookies are really addictive and very delicious.*


1 cup butter
1/2 cup shortening
3 TBSP milk
3 tsp vanilla or lemon extract
1 tsp baking powder
2 1/4 cup sugar
3 eggs
3/4 tsp salt
4 1/2-5 cups flour (depends on how sticky you like the dough to be)

Cover and refridgerate for a couple of hours.

Roll out so it's about 1/4 inch thick. Cut out. Bake for 8-10 minutes at 400 degrees. Cool completely, then frost.

FROSTING
1 8oz cream cheese, softened
2 1bs powdered sugar
1 1/2 tsp vanilla
1 1/2 tsp almond extract
evaporated milk or regular milk to consistency you like

(This frosting recipe makes about double what you need for 1 batch of cookies; so I usually 1/2 it or double cookie batter)
