Texas Roadhouse Rolls and Cinnamon Butter CopyCat



Rolls
3 1/2 tsp dry yeast
¼ cup warm water
1 cup milk
¼ cup sugar
¼ cup honey
4 cups all-purpose flour
1 tablespoon melted butter
1 egg
1 teaspoon salt

Butter
1 cube butter
1/2 cup powdered sugar
1/4 honey
½ teaspoon cinnamon


Directions:

Preheat oven to 375.

Soften yeast in warm water with a teaspoon of sugar.

Scald milk; cool to lukewarm. Pour into a large bowl.

Add yeast, sugar, honey, and half the flour to make medium batter.

Beat thoroughly. Let stand until light and foamy.

In a small microwaveable bowl add melted butter, egg, and salt. Beat well. Add to the flour mixture.

Add the rest of the flour to form soft dough.

Sprinkle small amount of flour on counter and pour the dough onto the counter. Knead dough until smooth.

Clean the large bowl that you were using and then grease the surface.

Then put dough in greased bowl; turn over to grease top.

Cover, let rise in warm place until double in bulk, then punch down.

Turn out on floured board. Divide into portions for shaping; let rest 10 minutes.

Shape dough into desired forms and place on greased baking sheets. Let rise until doubled.

Bake for 10 minutes; then reduce temperature to 350 degrees for 10 to 15 minutes more.

Cool on rack.


For cinnamon butter, blend all ingredients at room tempature.

**I did not follow the recipe to let the dough rise in between because I didn't have enough time. They still turned out good, but if I did let them rise they would have been better.

Starbucks Pumpkin Scones YUM!


2 c flour
7 TBSP sugar
1 TBSP baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger
6 TBSP butter
1/2 c canned pumpkin
3 TBSP half and half
1 large egg

Powdered Sugar Glaze
1 c powdered sugar
2 TBSP milk

Spiced Glazed
1/2 c powdered sugar
1 TBSP milk
1/4 tsp cinnamon
1/8 tsp nutmeg
1 pinch ginger
1 pinch cloves

Preheat oven to 425 degrees. Line baking sheet with parchment paper.

Combine dry ingredients in a large bowl. Cut in butter with pastry knife until mixture is crumbly. Set aside.

In a small bowl whisk together pumpkin, half and half, and egg. Fold into dry ingredients. Form the dough into a ball. Pat out dough onto a lightly floured surface and form it into a 1 inch thick rectangle. Using a pizza cutter slice the dough into thirds. Then cut those into triangles so you have 6 triangles total.

Place on prepared baking sheet. Bake for 14-16 minutes. Scones will be lightly brown. Place on wire rack to cool.

While they are baking prepare plain glaze and spiced glaze. When the scones are cooled brush plain glaze. The more the merrier in my opinion. Then drizzle spiced glaze over the top. Super yummy to eat with a tall glass of milk!

Banana Bread

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas
  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
  3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Easy Breadsticks

2 TBSP yeast

1/2 c warm water

2 c warm milk

1/2 c melted butter

1/2 c sugar

2 tsp salt

2 eggs

7 c flour


Put butter, not melted, in a large microwave safe bowl. Microwave until melted. Add milk, water and yeast. Whisk together. Add sugar, salt and eggs. Whisk together. Whisk in flour 1 c at a time until you can't use a whisk anymore then switch to a wooden spoon. Once well combined cover and set aside. Let it raise until double its size. (I only had 30 minutes to let it rise, and they seemed to be just fine).


Roll out on a sprayed surface (I like to use cooking spray instead of flour so the dough doesn't get too dry with the added flour). Roll out until 1/2 inch thick. Cover with the following ingredients:


melted butter

parmesan cheese

garlic powder

season all or salad supreme


Cut the dough using a pizza cutter and place on greased cookie sheets. Let it raise for 15 minutes and bake at 375 for 15 minutes or until golden brown. To make them look prettier top with melted butter again-or don't if you are worried about your butter intake :)

Pumpkin Breakfast Rolls

I halved the recipe for my little family of 3.

2 pkg pillsbury cresent rolls
1/4 c brown sugar
1/4 tsp cinnamon
4 oz cream cheese
1/4 c pumpkin
1/8 tsp nutmeg

Unroll cresent rolls and pinch together to form "cinnamon roll" dough (long sides pinched together). Mix together the rest of the ingredients in a blender or with a hand mixer. Then spread over dough. Roll long end to the other long end (again, like a cinnamon roll). Cut either with a knife or using dental floss into 1/2-1 inch pieces. Place into greased 9" round pans leaving the center open. Bake at 350 for 28-30 minutes. Cool for 10 minutes then frost.

Frosting
4 oz cream cheese
1/2 c powdered sugar
1/2 tsp vanilla
1 TBSP pumpkin

Little Monkey Bread

Recipe from Picky-Palate.com

1 roll French Bread Loaf (Pillsburry), cut into pieces
6 TBSP sugar
3 TBSP cinnamon

Toss dough pieces in cinnamon and sugar. I put bread pieces in a gallon ziplock baggie and shook it until covered. Place dough in LINED muffin tins. (I made them without being lined and it was a pain to clean so I recommend doing lined).

1/2 c butter
1/2 c brown sugar

Melt butter and add sugar. Mix. Pour over dough pieces evenly. Bake at 350 for 18-20 minutes. Remove from oven. Let sit for 5 minutes then drizzle with frosting.

Frosting
1/2 c powdered sugar
2-3 TBSP heavy cream

Cinnamon Rolls

5 cups hot water
1 1/2 c sugar
1 cup powdered milk
4 TBS yeast
4 eggs
12-15 cups flour
4 tsp salt
1 cup oil

Frosting
1 ½ cups white sugar
1 cube butter
1 8oz cream cheese
½ cup milk
1 TBS vanilla
powdered sugar to consistency

Combine water, sugar, milk, and yeast in large bowl. Allow yeast to activate. Add eggs and 7 cups flour. Stir or beat until thoroughly mixed. Dough will resemble cake batter. Let rest until bubbly or it raises to top of bowl (10-15 minutes). Add salt, oil and remaining flour. Knead for 10-12 minutes Dough should be a little sticky but manageable. To prevent dough from sticking, spread butter flavored Crisco on counter. Do not use flour in place of the Crisco. More flour will make the cinnamon rolls too heavy. Roll our dough on counter in rectangle about ½ inch thick, 14 inch high and 30 inch long. Spread with one cube real butter, sprinkle generously with cinnamon and sugar (about 1 cup) then crumble generously with brown sugar (1-2 cups). Carefully roll up into long roll trying not to stretch the dough. Cut the rolls about ¾ inch thick with dental floss. Place on cookie sheet. Let them raise until they are touching on all sides. Bake at 375 for 15-18 minutes or until golden brown on top.

Butterhorn Rolls

1 TBSP yeast
1/2 cup butter
1 cup warm milk
1/2 cup sugar
3 eggs, well beaten
3/4 tsp salt
4 cups flour
up to 1 cube melted butter, to roll dough in
Melt butter. In large bowl add butter to warm milk, salt and sugar. Mix. Add eggs. Mix well. Add yeast. Add flour 1 cup at a time, stirring until you can't stir anymore. Then knead with hands. Add extra flour if needed. Dough should be sticky. Let it rise for 1 hour or so covered. Take half of dough and roll it out on counter top in a circle (sprinkle flour underneath it to prevent it sticking to counter top). Cut into wedges with pizza cutter, like you would a pie. Pour some melted butter in a cookie sheet-it just depends on how much butter flavor you want. Pick up one slice of dough, swipe it in the butter, then roll from big end to little. Place on cookie sheet. Continue with all wedges of dough. You should be able to fit 3x9 rolls on one cookie sheet. Repeat process with other half of dough. Let them rise covered for 30 minutes (if you don't have time to let them rise the 2nd time its ok). Bake at 350 degrees for 20 minutes or until golden brown. Serve warm!

Xenia's Bread



4 c warm water
1/3 c oil
1 c honey
1 TBSP salt
2 TBSP lecithin
2/3 c powdered milk
3 eggs
2 3/4 TBSP yeast
1/2 c wheat gluten
2 c white flour

Combine all ingredients in a Bosch. Continue mixing while adding 8 c MORE flour 1/2 cup at a time. (I do 2 cups wheat and then 2 cups white alternating). This is the tricky part. If after you added the 8 cups flour (total of 10) and your dough is still sticking to the sides of the bowl you add 1/2 c of flour at a time until it doesn't stick.

Mix for 10 minutes (after you're done adding all flour). 2 minutes left of mixing time add 1/4 c dough enhancer. Let dough stand in Bosch for 10 minutes. Then mix all the air out of it and dump on a flour coated counter. Divide into 6 pieces. Roll pieces into loaf shape and place in bread pan.

Preheat oven to 400 degrees. Once you put the bread in reduce temp to 350. Bake for 30 minutes.

Crazy Bread


2 loaves French Bread, cut in half long way
2 cubes butter, softened
1/2 c mayonaise
1 c shredded cheese
3 green onions, chopped
garlic powder, sprinkle
salad supreme, sprinkle

Mix it all together, except bread, and then spread it on the bread! Broil on high for 2 minutes MAYBE. Watch it carefully! It will burn easily!

Margherita Pizza


Crust
2 1/2 to 3 c flour
1 TBSP yeast
1/2 tsp salt
1 c warm water
2 TBSP olive oil

Combine water, salt, yeast and oil. Whisk together. Slowly whisk in flour. When it gets too tough to whisk either fold with spoon or hands. Dough should have a little stick to it but not too much. Cover and rise for 15-30 minutes.
Preheat oven to 425 degrees. Flour counter or table top to roll dough on. Roll into a circle. Place on pizza pan or stone. Fork dough several times to keep from forming bubbles. Bake 10 minutes. Crust should NOT be golden brown and it WON'T be cooked all the way. Remove from oven, but keep oven on.

Toppings
2 Roma tomatoes, thinly sliced
Fresh Mozzarella, thinly sliced (I bought a little package from Smith's and didn't use it all)
1/2 c shredded mozzarella cheese
Basil leaves, torn into pieces
Balsamic Vinegar (optional)

Top crust with tomatoes, then mozzarellas and Basil. Splash vinegar on it. (I liked it, but my husband said next time no). Bake for 10-20 minutes until crust golden brown.

Spaghetti with a Creamy Italian Red Sauce with Grilled Asparagus


I've been taking a cooking class at the Blue Lemon and incorporated what I learned with my own twist. It turned out pretty good! Enjoy!

Sauce:
Olive Oil, 2 turns around pan
1-2 cloves of garlic
1/2 can Prego Spaghetti Sauce
Heavy Cream, enough to cover noodles
Salt to taste, about 1/2 tsp
Parsley to taste, about 1 tsp
Roux
.
Heat olive oil in a big sauce pan. Add garlic. Roast garlic. Add spaghetti sauce and cream. Whisk together. Add seasonings and roux, to thicken. Whisk until smooth. Add cooked spaghetti. Use tongs to stir/fold noodles into sauce. Heat.

Lemon Grilled Asparagus:
olive oil
lemon juice
parmesan cheese
pepper
salt
.
Heat olive oil in a sauce pan. Add asparagus and squirt lemon juice over asparagus. Sprinkle cheese, pepper and salt over veggies. Grill veggie one side at a time.

Breadsticks:
rhodes rolls, thawed and risen (6 for given amounts)
butter, melted
parmesan cheese
garlic salt
parsley
.
Melt 1/4 cube butter. Pour into a cookie sheet. Roll out the rolls into snakes. Roll in butter and line them up in cookie sheet. Sprinkle spices over it. Bake at 350 degrees for about 15 minutes or until golden brown.

Banana Bread


1 cube margarine
1 cup sugar
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp cloves
3 bananas
chocolate chips (optional)

Mix margarine, sugar, eggs, and vanilla until smooth. Add dry ingredients; mix. Add banans; mix. Add chocolate chips to your desire. Pour into 2 greased bread pans or 1 big bread pan. Cook at 325 for 1 hour (small loaves) 1hr 20 mins (large loaf).

French Bread


6 cups white flour (or use some wheat and it's still great)
2 1/4 c warm water
3 tsp salt
3 TBSP yeast
a bit of olive oil

Put the warm water and yeast in the Bosch-let it set for about 2-3 minutes
Put the rest of the ingredients in-mix for 10 minutes
Put the dough in a pam sprayed bowl and let it rise-2x or 3x size
Put the dough on a cookie sheet with parchment paper beneath it
Let the dough double in size
Slightly cut top of bread at angles to make lines on bread.
Preheat oven to 400 degrees. Cook for 15 minutes. Should be golden brown
